Toffee - Cheryl
2 sticks butter
1-1/2 Cups sugar
1/2 tsp cinnamon
1/2 tsp vanilla
1 Tbsp water
1 Cup slivered almonds
or 1-1/2 Cups sliced almonds
or 1-1/2 Cups chopped pecans
1 Cup Chocolate (to melt on top)
1/4 Cup Almonds chopped (for topping)
In a 4-quart saucepan on medium heat add butter, sugar, cinnamon and vanilla and cook on medium heat, stirring occasionally.
Cook until 300 degrees.
The mixture will have a cloud-like consistency and at 300 it has more of a peanut butter consistency.
Add water. Be careful it will boil up.
Continue cooking another 3-4 minutes.
Take off heat and stir in almonds. Pour onto a large sprayed aluminum cookie sheet and carefully spread with a spoon.
Add chocolate to top, allow it to melt for a couple of minutes then spread over the top.
Sprinkle on 1/4 cup finely chopped almonds.
Allow to cool before breaking apart.
Chocolate discs are sold in market or a candy shop. You could use Hershey's chocolate or Candy kisses or chocolate chips.
No Bake Cookies - Cheryl
In a 4 quart sauce pan on high heat add:
1 stick butter
2 cups sugar
1/2 cup milk
1 tsp vanilla
1/3 cup cocoa (optional)
Bring a boil, boil 1 minute.
Take off burner and stir in:
3/4 cup peanut butter (crunchy or smooth), stir in until melted.
3 cups quick oatmeal
Spoon onto waxed paper and let cool.
Tip: Cookies she spread just a bit. If mixture looks to dry and doesn't spread add a splash of milk. If mixture looks too runny add a small handful of oats.
Apple Crisp - Cheryl
4 Granny Smith apples, large
4 Fuji apples, large
1 cup sugar
1 cup brown sugar
3 to 4 Tsbp flour
1 tsp cinnamon
1 sprinkle of nutmeg
1 tsp lemon juice
2 shakes of salt
Streusel
1-1/2 cups flour
2 cups brown sugar, packed
1 stick butter cut or broken into small pieces
Peel and slice apples Into Thin slices, add lemon juice
Add dry ingredients in a separate bowl and stir together
Stir dry ingredients into the apples. Butter a deep 9-Inch baking dish and add apples
Add flour, brown sugar and a Sprinkle of cinnamon in a bowl and stir together
Cut butter into small pieces and mix together with flour/ brown sugar mix
Try to keep butter in small chunks about the size of your fingernail
Spread over top of apple mixture
Bake at 350 for about 45 -60 minutes, until apples are tender
White Chip Island Cookies - Ann
1-2/3 Flour
3/4 tsp Baking Powder
1/2 tsp Baking Soda
1/2 tsp Salt
3/4 Cup Softened Butter
3/4 Cup Packed Brown Sugar
1/3 Cup Granular Sugar
1 tsp Vanilla
1 Large Egg
12 oz White Chocolate Chips
1 Cup Coconut
1 Cup Chopped Macadamia Nuts
Mix sugars, egg, butter, vanilla, baking powder, baking soda and salt with mixer
Stir in flour, chips, coconut, nuts
Roll into balls onto lightly sprayed cookie sheet
Bake at 350 for 11-15 minutes
Cool
Makes approximately 3 Dozen based on scoop size
