Buffalo Chicken Wrap - Ann

3 Cups cooked Chicken

1/3 Cup Mayo

1/3 Cup Green Onions – Chopped

1/ 2 Stalk Celery – chopped

2 Tbsp Sour Cream or Greek Yogurt

1 to 2 Tsp. Red Hot Sauce

Mix together

Place about ½ cup on Flour Tortilla

Add 1/4 cup shredded cheese over top

Roll sides in and roll-up

Spray with olive Oil and Salt and Pepper

Place it in a non-stick pan

Brown slowly on each side

Brcolli Balls(appetizer) - Cheryl

1 package frozen broccoli, cook, drain and chop
1 medium to large onion, chopped fine
1 tsp pepper
1 tsp garlic salt
1/2 tsp garlic powder
1/2 cup Parmesan cheese
1 box of stove top stuffing, don't cook
6 eggs, beaten

Cook and drain broccoli.

Add all ingredients in a large bowl and stir.

Let set in the refrigerator for at least 2 hours or overnight.

Roll into balls, a little smaller than a golf ball,

Bake at 325 for 25 minutes or until a little brown

If you let rise overnight you will get 10 to 15 more balls

Applebee’s Oriental Chicken Salad - Ann

Dressing:

3 Tbsps honey

1-1/2 Tbsp Rice Vinegar

1/4 Cup mayo

1 tsp Spiced mustard

1/8 tsp Sesame Oil

Blend in blender or mixer

 

Chicken:

1 Large Egg

1/2 Cup milk

1/2 Cup Bread Crumbs

1 tsp Salt

1/4 tsp Pepper

1/2 Cup flour optional

Mix together

Spray with Avocado oil

Bake in oven at 450 degrees for 15-20 minutes

Air Fryer at 360 degrees for 10 minutes

or Pan Fry

All-until chicken is at 165 degrees

 

Salad:

3 Cups Chopped Romaine

1 Cup Red Cabbage (or green)

1 Cup Napa Cabbage (optional)

1/2 Cup Julienned Carrots

1 Green Onion – chopped

1 Tbsp sliced Almonds

1/3 cup Crispy Chow Mein Noodles

Mix together and top with chicken and dressing

Strawberry Salad

6 Cups trim Mixed Salad Greens

1 Pint Fresh Strawberries – sliced

4 oz Feta Cheese

1/4 Cup sunflower kernals

Balsamic Vinegar
